I don’t concoct a lot of drinks but when I do, I like them simple. This one’s just as good with alcohol as without and grapefruit or even orange would work in this recipe too.

Ingredients (serves 4)

2 pink pomelos
1/2 cup mint leaves, washed
4 shots white rum (optional)
4 calamansi
4 tbsps honey
800 ml soda water or lemon lime soda
ice for serving

Directions

  1. Juice the pomelo and calamansi, keeping a few small pieces of pomelo meat for garnish.
  2. Mix together the pomelo and calamansi juice together with the honey and mix well.  Place into 4 serving glasses.
  3. Add in the mint leaves into the glasses and slightly crush with a spoon.  You may add in white rum (optional).
  4. Top each glass with the tonic water and ice. Serve immediately.
