We don’t get a lot of Cobb Salad here in the Philippines, but the first time I laid eyes on one, I knew I would love it. There’s something about the classic salads like Caesar and Cobb that I love, so I made my easy version of it. There is, of course, bacon on it. It’s easy to substitute the vegetables and fruits, but all these ingredients should be easy to find in any grocery store.

Ingredients (serves 4)

 

2 heads iceberg lettuce, sliced thinly
1 cup cherry tomatoes, halved
2 hardboiled eggs, sliced
1 avocado, sliced thinly with calamansi juice added to prevent browning
1 cup crispy bacon, sliced
125 ml plain yoghurt
2 tbsps blue cheese
2 tbsps mayonnaise
salt and pepper

Directions

  1. To make the dressing, combine the blue cheese, yoghurt and mayo. Season with salt and pepper.
  2. To fix the salad, arrange the lettuce in a neat row on the middle of the plate.
  3. Arrange a neat row of cherry tomatoes on one side of the lettuce and a row of eggs on the other side.
  4. Arrange a neat row of bacon beside the eggs and place the avocado slices beside the tomatoes.
  5. Serve the salad with the dressing on the side.
