Obviously, I use the term quesadilla very lightly here as this is a dessert, but I love the classic combination of ube, macapuno and cheese and I wanted to serve it in a new package that has a bit of crunch. Other combinations with cheese might be interesting too, like apple, guava and cheese or something like that. But this combination here is dynamite!

Ingredients (serves 2)

4 pcs flour tortillas
200 ml ube jam or halayang ube
200 g macapuno strips
200 g quickmelt cheese
salt to taste

Directions

  1. Spread the ube jam, macapuno and cheese on 2 of the tortillas. Top with the other two tortillas.
  2. On a dry, nonstick frying pan, heat up the quesadillas until the tortillas turn golden brown. Flip and cook the other side.
  3. Slice and serve immediately.
