This is another one of those recipes, where I make the best of what I could find in the pantry and fridge. This can be made with any ground meat or even a combination. If you want it spicier, a few dashes of hot sauce would be great as well.

Ingredients (serves 2-4)

200 g ground pork
1 large eggplant, cut into small cubes
6 shitake mushrooms, cut into cubes
2 tbsps onions, minced
1 clove garlic, minced
1 tsp ginger, minced
2 tbsps sweet chili sauce
2 tbsps cashews, roughly chopped (optional)
salt and pepper
1 tbsp olive oil
2 cups steamed rice
green onions for garnish
salt and pepper to taste


  1. In a saute pan, saute the first 6 ingredients in the olive oil. Season with salt and pepper. Cook for 5 minutes. Season with salt and pepper.
  2. Pour in sweet chili sauce and mix well.
  3. Serve the mixture on top of steamed rice and top with cashews and green onions.
