It’s almost always hot in Manila and it’s cool drinks like this one that can truly refresh you. As I am not much of a mixologist, this is super easy to make and the amounts are interchangeable. White rum can be replaced with vodka too.
Ingredients (serves 4)
2 pink pomelos
1/2 cup mint leaves, washed
4 shots white rum (optional)
4 tbsps honey
800 ml soda water or lemon lime soda
ice for serving
- Juice the pomelo and calamansi, keeping a few small pieces of pomelo meat for garnish.
- Mix together the pomelo and calamansi juice together with the honey and mix well. Place into 4 serving glasses.
- Add in the mint leaves into the glasses and slightly crush with a spoon. You may add in white rum (optional).
- Top each glass with the tonic water and ice. Serve immediately.
