One of the things I always secretly hope for when I eat in Korean restaurants, is that the restaurant gives away free Kimchijeon or kimchi pancakes. During this lockdown, as I continue to immerse myself in K dramas and Korean cuisine, I realized that these are pretty easy to make at home! If you don’t like kimchi, use the same recipe and sub it with vegetables or seafood or even bacon.

Ingredients (serves 4)

230 g kimchi, chopped
1/2 cup all purpose flour
1/2 cup water
4-6 tbsps vegetable oil
salt and pepper to taste

Directions

  1. Combine the kimchi, flour and water. Also add in any kimchi liquid you get from chopping the kimchi.
  2. Pancake batter should be cool, and just thick enough to cover your finger.
  3. In a non stick pan, add in the oil and half of the batter, making sure the batter is spread thinly and evenly. Fry each side for about 2 minutes or until crispy.
  4. Serve as a side dish to your favorite Korean dishes.
