Ingredients (serves 4 to 6)
1 ¼ cups graham crackers, crushed
¼ cup walnuts, crushed
10 tablespoons melted butter
200 g chevre cheese
250 g cream cheese
2 green apples, peeled and cored
4 tbsps brown sugar
120 ml white wine
salt, paprika and pepper
- Mix together crackers, walnuts and melted butter. Season with salt and pepper.
- In a small springform cake pan or small ring molds, press the cracker mixture to form a crust. Let cool in the ref.
- Mix together cream and chevre cheese. Season with paprika, salt and pepper. Spoon the mixture on top of the cooled crust and put back in the ref until ready to serve.
- In a pan, saute remaining butter, brown sugar and apples which have been sliced thinly. Cooked until apples are still slightly crunchy but mostly soft. Top on the cheesecake as garnish. Serve chilled.
