With Derrick Monasterio as guest, I knew a chicken dish would be in order as it’s his favorite protein and he is watching his physique. I made a more healthful version of one of my favorite Taiwanese dishes and I’m glad he loved it. If you can’t find shaoxing wine, any rice wine will work also.

Ingredients (serves 2)

300 g chicken breast fillets, each fillet cut in 3
1 thumb sized nob ginger, sliced thinly
2 cloves garlic, minced
1 red bell pepper, sliced thinly
4 tbsps shaoxing wine
2 tbsps dark soy sauce
2 tsps light soy sauce
2 tsps sugar (optional)
2 tbsps sesame oil
fresh basil to taste

Directions

  1. In a sauce pan, saute the garlic, red bell pepper and ginger in the sesame oil for 2 minutes.
  2. Add in the chicken fillets and stir fry for 1 minute.
  3. Add in the wine, soy sauce and sugar (if using) and mix well. Bring to a simmer until chicken is cooked and the sauce has reduced, about 5-7 minutes.
  4. Top with fresh basil right before serving.
